Southwest France, made from the rare and expressive Souvignier Gris Organic
grapes and now savored around the world.

THE TASTE
Domaine Matilda white wine, reveals a vibrant aromatic expression, very close to theorganoleptic qualities of Sauvignon. You'll be charmed by its bright nose of citrus, white peach, and delicate floral notes, balanced by a lovely roundness and a subtly mineral finish.
HOW IS DOMAINE MATILDA WHITE MADE?
Made from the Souvignier Gris grape variety, our Domaine Matilda White wine is grown on one of the most beautiful terroirs in the Cahors appellation, nestled in the heart of southwest France. This innovative and resilient grape variety is a true winemaking revolution. it thrives without any chemical treatment, offering an eco-responsible alternative far beyond organic or biodynamic practices.
Hand-picked at dawn
We harvest exclusively by hand, early in the morning, when temperatures are coolest. This
precise timing preserves the natural freshness and aromatic intensity of the grapes.
An innovative grape variety
Souvignier Gris is a new-generation hybrid grape variety, naturally disease-resistant and
therefore grown without pesticides or fungicides. In the glass, it offers aromatic complexity
and vibrant clarity, reminiscent of a great Sauvignon Blanc, with notes of white peach, citruszest, and subtle floral nuances.
Temperature-controlled fermentation
Fermented at a low temperature around 16°C, the wine retains its aromatic purity and delicate balance. No oak or overpowering influences: just the grapes, the terroir, and the winemaker's touch.
Aging in stainless steel vats
Aged for 3 to 4 months in vats to preserve the wine's liveliness, energy, and aromatic integrity, for a white wine that is both refreshing and full of character.
